Vietnamese-Style Ground Beef Bowls

- 17 gMirin (salted cooking wine)

Cook the rice by rinsing, draining, combining with rice, salt, and water in a pot, boiling, then simmering 23-25 minutes until tender. Fluff with a fork.

Prepare ingredients by washing produce, finely chopping ginger (2 tsp or 4 for 4 servings), roughly chopping garlic (2 cloves or 4 for 4 servings), slicing cucumbers, chopping cilantro, and marinating vegetables with soy glaze, mayonnaise, sambal oelek, mirin, salt, and pepper for at least 10 minutes.

Cook beef in a pan with olive oil until browned, drain excess oil, add soy-lime sauce, ginger, and garlic, cook 2-3 minutes until coated. Serve rice topped with beef and marinated vegetables, drizzled with sambal mayo and garnished with cilantro.
